Just figured out that for some weird reason, when I comment this part out with C-Style comments, the coloring persists. At least until I close and reopen the file.

That's really odd. I am getting the same effect here, VS2022 version 17.7.4, on a machine where VA has never been installed. It seems to happen when working in C# with lambda's, or Linq, depending on what this is being called.

In more basic C# code adding a comment causes the colouring to update immediately, but with Lambda's the comment colour gets applied only partly until the file is reopened. At a guess, Lambda's are considered "hard" to colour, but that's just a guess.
